One stick butter room temperature 3/4 cup sugar 2 eggs 1 cup unbleached flour 1 teaspoon baking soda 1/2 teaspoon salt 1 cup whole wheat flour 3 large ripe bananas mashed 1 teaspoon vanilla preheat oven to 350° grease 9*5*3 pan cream butter, sugar until fluffy
add eggs one at a time, beating well
sift dry ingredients
add to creamed mixture, mixing well
fold in bananas and vanilla
pour into prepared pan bake for 50–60 minutes cool for 10 minutes in pan and then on rack.
