Guacamole: 3 ripe avocados 1 tomato, peeled and seeded 1 small red onion, finely diced 1 tablespoon chopped hot jalapeno pepper (I use pickled - it is easier) Dash of coriander (I use more) 1 tablespoon lemon juice (I use lime and more than this) 1 tablespoon vinegar (usually don't use, because I put in so much lime) 2 tablespoons salad oil 1 teaspoon salt Mince avocados and tomato. Stir in all other ingredients. If made ahead of time, put into bowl and cover the top with plastic wrap. The wrap should be touching completely the guacamole.
