Peanut Brittle Ingredients: 3 C. sugar 1 C. water 1 1/2 C. corn syrup (lite) 1 stick butter (cut in half) 1 pound or 2 1/2 C. peanuts w / skin ( Spanish Peanuts Best ) 2 Tbls Baking Soda 1/2 tsp salt ( if peanuts are unsalted ) Directions: Use a 4 quart heavy sauce-pan blend sugar, corn syrup & water. Bring to a boil over high heat stirring until at soft ball and/or 238`F . Scrape bottom of pan from time to time with wooden spoon. Butter slab or other surface ( with half of butter ) where brittle will be poured. Add peanuts stir & bring to a boil. Cook until it reaches a hard crack stage and/or 300`F. remove from heat then add remaining half stick of butter & baking soda. Pour mixture onto buttered surface scraping off bottom of pan. Spread mixture as thin as possible. It should stretch two times the original size. When cooled crack into bite sized pieces. Store any extra in an air-tight container.
